Autumn fruit cobbler
This is a very quick all-in-one-pan dish that can be made very cheaply in early autumn when apples and blackberries are growing in abundance. Substitute any seasonal fruit you want
For the topping
260g (9oz) self raising flour
1 teaspoon baking powder
80g (3oz) soft butter
100g (4oz) caster sugar
pinch salt
1 egg
100ml (½ cup) milk
For the filling
4 eating apples
80g (3oz) sugar
80g (3oz) butter
150g (6oz) blackberies
To make the topping place all of the ingredients into a food processor and whizz up.
To make the filling slice and de-pip the apples. Place the butter into a metal handled frying pan and fry the apples until they become golden brown and syrupy. Add
the blackberries. Place blobs of the filling on top and bake for 20 minutes in a medium to hot oven. Serve with cream or custard.
