When I'm making stir frys I tend to use seasonal and the cheapest vegetables available - they don't need to be Oriental or Asian in origin.
Don't worry if the noodles seem hard after soaking as they will soften as you cook them in the wok.
little vegetable oil
2 cloves garlic, crushed
1 small thumb ginger, fine grated
1 red pepper
soy sauce to taste
A little water
1 small pack of rice noodles
First of all soak the rice noodles in cold water and leave for at least an hour. Heat the oil in a wok over a high flame. Add the oil and fry the garlic and ginger for about 30 seconds. Add the finely sliced vegetables and cook for about 1 more minute. Add the beansprouts, mix and follow with the noodles. Add the soy sauce and a little water and cook until the noodles are soft.
